The name is inspired by my lactating friend, P. This is probably the only cupcake where you can see a slight pink tinge in the Swiss meringue icing. It looked fairly pink in the bowl, but when I spread it onto the cupcakes, the colour seem to disappear. Note to self and all others thinking of making cupcakes, I think the colour should be judged when it’s spread, not in the bowl.
Secondly, I think the icing might be a little floppy still. Mom said I should’ve brought the sugar solution to a hard ball stage, instead of just simmering it for three minutes as stated in the recipe.Posted by Karen at October 22, 2006 08:32 PM in food & drinks , pink
