Chocolate Hazelnut Biscotti
Also known as Nutella Biscotti. This is a recipe you have to try at your own risk, because I haven’t finished experimenting with it yet.
First trial:
100g of hazelnuts
85g unsweetened chocolate
250g sugar
2 eggs
1 tsp baking powder
115g flour
2 tbsp cocoa powder
The second trial (which I never got round to cos I kept changing my own recipe)
75g hazelnuts
3 oz dark chocolate
250g sugar
cocoa powder (2-3 tbsp, I can’t decide)
2 eggs
1 tsp baking powder
1/2 tsp almond essence (optional)
Additional 150g hazelnuts
Your best bet (the recipe from ABC delicious)
220g caster sugar
2 eggs
260g plain flour
40g cocoa powder
1/2 tsp baking powder
150g whole hazelnuts, skins removed
Skip steps 1 – 3, if using delicious recipe.
1. Grind hazelnuts with cocoa powder till it resembles a fine powder. Do not over-grind or it’ll become oily. If that happens before it becomes fine, you may add some flour from the 115g to the grinder.
2. Grind chocolate with some flour (again from 115g).
3. Mix both ground ingredients together with flour
4. Beat eggs and sugar till thick and pale.
5. Add flour mixture and hazelnuts.
6. Shape into logs and bake at 170°C for 30 mins.
