Christmas 2005

This year, big dinner with LH and Amy as per tradition. Luckily his brother joined us to help finish the food. I made a salad with xmas colours and a potato dish (of course). My watermelon, watercress and feta salad with olive oil / lemon juice dressing:

LH’s egg oyster shot, a big hit with everyone. There’s a nice poached egg hidden somewhere inside:

The main dish was capon, a huge bird that’s a nice turkey substitute:

By the way, we only just found out what a capon really is. Not too appetising if we had known!

Karen’s the dessert queen of course. Her delectable chocolate meringue for the night:

We also had potatoes with sausages, wagyu grilled on the BBQ, Amy’s off-the-shelf green salad and mushroom soup from Fassler.

Believe it or not, there’s another dish that we forgot to take photos of: the wagyu!

Hi Heather, it just occurred to me that the feta looks like snow on the salad. Kinda pretty. When we were eating it, we notice none of those things though.

OK, at amy’s request, here’s the salad recipe. (feeds 4 comfortably)

1. Half of large watermelon, slice flesh into cubes
2. bunch of watercress, use only the leaves
3. feta, about 180g block, remember to rinse off the brine before breaking up
4. sunflower seeds, if you like

Just mix everything up by hand and throw in the dressing:

- olive oil
- lemon juice (about 1/2 lemon)
- salt and pepper
- fresh oregano (i can only find this at Tanglin)
- some sugar or honey if you like

Make sure you mix the dressing well.
