Magic Mushrooms

Last weekend, mom stayed over and we made muffins. Thirty of them. There were the Corn and Cream Cheese Muffins, Milk and Dark Choc Muffins, Milk, Dark Choc and Cranberry Muffins, and Gula Melaka Muffins. The line between a muffin and a cupcake is pretty damn fine, not that it really matters when you’re eating them. I just had one!

Posted by: Karen at December 5, 2005 12:51 PMMade the corn & cream cheese muffins again yesterday. Have to put down the recipe before I forget:
125g self raising flour + 1/4 tsp baking powder
2 eggs, beaten.
92.5g butter
92.5g caster sugar
1/2 cup cream-style corn
1/4 tsp vanilla
Cream cheese cut into cubes, as much as you like
Preheat oven to 190°C.
Cream butter and sugar till light and fluffy. Add eggs a little at a time. Add cream corn and mix well. Mixture should be very liquid and lumpy now. Don’t worry too much. Add self raising flour + baking powder.
Spoon into muffin trays along with cream cheese cubes. You may want to make sure that the cubes are well-distributed.
Bake at 190°C for 20 mins.
Makes 6 medium / large muffins.
Btw, does anyone know where t buy tiny muffin trays? I’ve got an entire row of tiny pink muffin cups. And I just realised they don’t fit any tray.
hey hi… can i ask if you have a recipe for the magic mushrooms? i tried the nutella biscotti’s “your best bet” recipe… think that doesnt work well for me.. =(
