Potato Hedgehogs

Highly successful and very popular! Crispy roasted potatoes!
Get potatoes of the larger variety, the longer the better.
Peel and slice potatoes in half, length wise.
Boil the tates in a pot of salt water for 5-10 minutes.
While boiling, pre-heat the oven. When done boiling, drain potatoes and put aside in an oven tray, face down.
Now, the important bit - use a fork and scratch the back of the potato halves, length wise. Make deep marks. You may need to use some force, as they’re still quite hard.
Throw some olive oil and butter in a frying pan over low fire. Less olive oil, more butter. When butter is melted, drizzle over the potatoes, and throw some salt on them.
Roast at 200 C for about 45 minutes. Check to see if they’re browning, and not burnt!
